Please note that due to popular demand, we are currently sold out of Sherry casks for this year. A new batch of 1st fill Sherry casks will be available to fill in 2025.
To mark the opening of our new whisky distillery we have released just 48 casks for sale to the public. This is the first time we have made casks available for sale since 2016 and is a unique opportunity to be part of an important moment in the history of our distillery.
Choose from three different cask types and then enjoy a yearly sample of your cask as it matures in our bonded warehouse in the Cotswolds. The cost includes up to 10 years of storage, allowing you to choose when to bottle it and the ABV of the final product.
For the Cotswolds cask offer we are offering the following cask types:
200 litre first fill Bourbon casks – these premium American oak barrels are ideal for ageing whisky and impart delicious notes of vanilla, honey and tropical fruits.
225 litre ex-red wine STR (shaved, toasted, recharred) casks – a signature cask of our distillery, these highly active casks give a rich and intense maturation, offering strong notes of toffee, chocolate and red fruits, as well as a beautiful, deep colour
250 litre sherry casks - the finest American and Spanish oak hogsheads, some of which have been seasoned with dry Oloroso sherry and others with sweet Pedro Ximénez. Full of dried fruits, chocolate and a touch of spice

We feel extremely lucky to live in one of England's most charming and beloved regions, full of character, romance and history. We try, where possible, to emphasise the rich agricultural bounty of the Cotswolds. The principle things that grow in the Cotswolds are fruits and grains, and these are the building blocks of our flavour profiles.
